Executive Chef-General Manager Marcus Olson, a native of a small town north of Seattle, Washington, graduated from Le Cordon Bleu- Western Culinary Institute, in Portland, Oregon. Chef Olson started in restaurants as a dishwasher in high school. He established standards working with world class ingredients in Seattle and later Alaska. Executive Chef/ Director of Food and Beverage at the Le Meridien in London, and Paris. Chef Olson learned his craft at The Bull Run Restaurant and Conference Center on Wall Street in New York City, and at The Brass Elephant Restaurant and Caterers in Baltimore. Chef Olson has relentlessly pursued the freshest products that were possibly available. This obsession with of great products led him and his Hand-Made French-Creole to Old Town-Alexandria and to the Two-Nineteen Restaurant.
